I can hardly believe that it is July already, where does the time go?  In honor of the upcoming 4th of July holiday, we decided to create a new twist on strawberry shortcake, a Red, White and Blueberry Dessert.  We packed all the ingredients and brought them with us on a recent picnic.  We easily assembled them at the picnic site for dessert, it made for a light but delicious summertime dessert.

Instead of using angel food cake, we used ladies fingers.  They are great because you can break them into whatever size you want quite easily and they are nice and thin; so if you aren’t craving a huge slice of angel food cake, these are a great (and tasty) alternative.  You can find them at your local grocer, already made.  You can also get creative with the homemade whipped cream and flavor it with caramel syrup, chocolate, or almond extract, the opportunities are endless!

berrydessert_250Place homemade whipped cream atop a section of 3 lady fingers, topped with fresh strawberries and blueberries.  The berries can be washed and cut ahead of time, and stored in a small Ziploc bag.  Make the whipped cream ahead of time and store in a small reusable plastic container and keep cool in your refrigerator, cooler or insulated bag until serving time.

Whipped Cream

To make your own homemade whipped cream, simply place 1 cup of whipping cream, 2 tbsp of sugar and ½ tsp of pure vanilla extract in a chilled mixing bowl and beat on medium speed until soft peaks form. Yields 2 cups of whipped cream. Note: Half the recipe for less.

For flavored whipped cream, simple add one of the following:

  • 2 tbsp unsweetened cocoa powder, plus 1 tbsp additional sugar
  • 2 tbsp amaretto, coffee, hazelnut, caramel, orange, or praline liqueur
  • 1/2 tsp almond extract
  • 1/2 tsp shredded lemon, orange or lime peel
  • 1/4 tsp ground cinnamon, nutmeg or ginger
